Identification
The lemon sole is a right-eyed flatfish of 25 to 40 cm with remarkably smooth, slimy skin. The upper side is warm reddish-brown to orange with irregular orange and yellow patches. The lateral line is almost straight. The small mouth distinguishes it from plaice and flounder.
Ecology
Lives on hard bottoms of sand, gravel, and stones at 20 to 200 meters depth. Feeds on small benthic animals: worms, crustaceans, and small shellfish.
In the Netherlands
Found in the northern and central North Sea. Caught mainly as bycatch in beam trawl fisheries. Valued as a premium flatfish with a fine, sweet flavor.
